The recovery screen should say the type of UFO.

The recovery yard breakdown should list what sorts they have, what their percentage is, and what (if any) their dissasembly state is.

When you recover a UFO from a terror mission or similar (i.e., it's landed itself) I'm guessing it's 100% - it should say this.

Actually it say the type of the UFO... once it's researched. It wouldn't be good if it told you things that you shouldn't know yet. This area (UFO showing name) could be improved, it should still name the UFOs differently - maybe like XCOM3 did "UFO Type 1" and so. However in XCOM3 it wasn't perfect either. It was possible that you met "UFO Type 1" (scout) first without ever seeing "UFO Type 0" (probe)

I concur with the "XCOM3" way - saying "UFO Type 2" or whatever.
Although the game does tell you what type of UFO you have in the log bar, when you recover a UFO. It says something like:
"UFO Fighter recovered, sold to russians for 3923"
So I was thinking it could state that type given the player is already privy to the information.

UFO_TypeToName might also work - this would ensure that it would also not be shown in the production code
