I think it should be the other way around. In the Xcom
series, you could produce items and sell them for
profit. We have a workshop, but it's cheaper to just
buy the stuff. Producing items and selling them would
allow us to make money off our labor.

This is already the case in the development version of the game (svn "trunk"). It is not in 2.0 (i.e. the RC series so far). It may not make it into 2.0 since it changes the balance of the game a bit and most of the development focus is on getting 2.1 right (which will have this feature).
