IMO Everyone liked poping heads in Jagal2 or in Fallout. Would it be very difficult to implement such feature?

the short answer is: no - not that heavy - the long answer is: no, not that heavy, but we don't have enough coders to implement nice features like this one before we get the main game ready.

that reminds me: it would be nice to somehow influence the height of the point you're aming at. At the moment, all shots go the centre of a tile/unit. It would be incredibly useful to be able to fine tune this, allowing you to throw grenades through windows or shoot at semi-covered targets.

I had similar thoughts on targetting. I was surprised when I first used a sniper rifle "head shot", which appeared to be going for the abdomen.

I plan to see if I can improve the grenade targetting;
-ATM you can roll, or lob: I thought i would see if I could get an arbitrary angle in between, and controllable launch speed too.

I have to finish fixing the to-hit estimate first.

I am very slow (as I trying to learn c and svn at the same time).
