I have a question, however; I am attempting to run the game in my computer's native screen resolution (1440x900). It allows me to select the resolution, but doesn't actually change the resolution. I have repeatedly exited the program and restarted, each time it defaults back to 1024x768. Is there perhaps a preferences file I can edit to set the resolution manually?
Again, thank you for your hard work.

There's a little icon you need to press to actually change the resolution after you've selected one. Have you pressed it?

as BTAxis said - press that button - but to answer your question, yes, there is a ~/.ufoai/2.2/base/config.cfg in your homedir
there you can find cvars for the resolution vid_mode, see the wiki for more infos about it (if still needed after you pressed that button ;-) )

I can't believe I missed "the button."
Contrary to rising suspicions, I'm not a complete idiot. I'll go and give it another try.
