Title: How do you tell what ammo is loaded?

For weapons with different ammo available such as the GL and shotgun?

Also how do you change what the initial load is?

Unfortunately you cannot know what ammo is loaded to weapon now. This will for sure change in the future
In the equip menu you can push (drag & drop) ammo to the gun, and that will replace the existing one.
