During a mission, am I supposed to have enough space on my soldiers to pickup all the alien weapons? Or is everything picked up automatically at the end of mission?

It's packed up if you win the mission.

I just finished an easy mission with 3 aliens. After they were dispatched fairly quickly and the mission was over, it said that only 2/7 objects were picked up.

Related question - as I didn't manage to dig up the answer through the search function: how does the game determine the number of items that are picked up at the end of a mission?

It depends on how the aliens are equipped, which is determined when the mission begins. Different alien weapon sets are used to equip the aliens. See /base/ufos/equipment_missions.ufo.

Also note that you won't know what was picked up until your bird returns to base.

The game in general gives not enough information to the player.

Actually, I'm totally okay with that. Not everything has been inventoried, so there's no way to tell what you've got until you get back and sort out all the randomly pointy bits from the actual items.
Speaking of which, do we know if the game properly tracks returns if you run multiple missions? Say you run a landing, then stop at a shoot down on the way back, does the game remember to give you stuff from both? Or should the bird return home first?

From experience I'd say yes. I've often done 2 or 3 missions in a row before returning to base, to then see a whole load of alien equipment turn up, so I think the game remembers it alright.

I was on the same misunderstanding. Maybe changing 2/7 in 7(2) or something like that would clarify this little point?

What happens if we evac? I would think we only get what we take and leave the rest behind, however I noticed after a failed autobattle that the Firebird came back with all the teams stuff even though they were all dead.
I was like... what the? who did that? Did the pilot wait for things to quite down and go picking through the carnage afterward?
