Stock Transfer Mission Request - Possibly some kind of rescue mission for transfers between bases. On Geoscape Transfer can be shown with convoy icon preceding between bases as interceptor or dropship would traverse the globe, unselectable to alter course but similar to dropship attack, convoy may be attacked. Also this perhaps promotes a escort option for interceptors.

Showing/defending transfers was an idea before but developers decided not to add it to the game.

Sounds like they played Interceptor. It wasn't much fun there either.

I figure that Phalanx uses secure military shipping, or underground transit lines between bases, explaining why it takes days instead of being flown in a drop ship in a couple hours.

Anarch Cassius:
I actually think this would be a really cool feature to add some variety of missions... with the caveat that it be a fairly rare thing and the transfer lines be MOSTLY safe. Not be able to control cargo transports is a given for simplicity but it would make them hard to protect if this was common. Maybe I'll do this for a mod if I ever have free time.
